From Passion to Purpose

We started the interview by asking,“What drove you to establish Baker’s Kitchen Destination, and how does your personal philosophy influence the products you create and offer?”

Sven Mostegl replied,“Sven the Baker established Baker’s Kitchen driven by a passion for baking and a commitment to promoting healthy eating. Embracing the art of fermentation and sourdough techniques, I prioritize creating products that not only taste delicious but also offer health benefits. My personal philosophy emphasizes using high-quality ingredients and traditional methods to craft wholesome, nourishing baked goods for my community.”

Crafting Health-Conscious Delights

Business Magazine UAE: Can you elaborate on the research and development process behind creating baked goods that cater to specific dietary needs, such as diabetes management or weight loss?

Sven Mostegl replied,“At Baker’s Kitchen, we take great care in researching and developing baked goods that cater to specific dietary needs, such as diabetes management or weight loss. Our R&D process involves collaboration with nutritionists and dietitians to understand the nutritional requirements and restrictions of these diets. We experiment with alternative ingredients, like whole grains, organic seeds, nuts, grain free flour and low-glycemic options, to create recipes that are both delicious and supportive of these dietary goals. Through meticulous testing and refinement, we ensure that each product meets our standards for taste, texture, and nutritional value, allowing us to offer a diverse range of options that cater to a variety of dietary needs.”

Crafting Culinary Harmony

Business Magazine UAE: How do you strike a balance between flavor, texture, and nutritional value when designing your recipes?

Sven Mostegl replied,“At Baker’s Kitchen, we believe in harnessing the power of long room temperature fermentation as a key aspect of our recipe development process. This technique allows flavors to develop slowly and naturally, resulting in baked goods that are rich in taste and complexity. By giving our doughs ample time to ferment at room temperature, we not only enhance flavor but also improve texture and nutritional value. This extended fermentation process helps break down gluten, making our products more digestible for those with sensitivities, while also increasing the availability of nutrients. By carefully balancing flavor, texture, and nutritional value with the benefits of long room temperature fermentation, we’re able to create baked goods that are truly exceptional in every aspect.”

Overcoming Adversity with Innovation and Resilience

Business Magazine UAE:
Could you share a challenging moment in the bakery’s journey and how you navigated through it while staying true to your mission?

Sven Mostegl replied,“One of the most challenging moments in our bakery journey was when we first started baking sourdough in the UAE. The climate and environment here are vastly different from where traditional sourdough techniques originate. We encountered issues with temperature and humidity levels, which significantly impacted the fermentation process and the quality of our bread. However, rather than giving up, we saw this as an opportunity to innovate and adapt our techniques. We experimented with different fermentation times, hydration levels, and flour blends to find the right balance for our unique environment. Through perseverance and dedication, we were able to overcome these challenges while staying true to our mission of producing high-quality, authentic sourdough bread. Today, our sourdough products are a testament to our commitment to excellence and our ability to adapt to any circumstance.”

Prioritizing Inclusivity

Business Magazine UAE: In what ways do you ensure that your products remain accessible to customers with different dietary restrictions or preferences?

Sven Mostegl replied,“We are committed to ensuring that our products remain accessible to customers (we call our customers “friends”) with different dietary restrictions or preferences at Baker’s Kitchen. To achieve this, we offer a diverse range of options that cater to various dietary needs, including gluten-free, dairy-free, vegan, and low-sugar alternatives. Our menu is carefully curated to provide options for customers with specific dietary restrictions, while still maintaining the highest standards of taste and quality. Additionally, we provide detailed information about the ingredients and nutritional content of our products, allowing customers to make informed choices based on their individual dietary requirements. We also welcome feedback from our customers and actively seek out suggestions for new products or modifications to better accommodate their needs. By prioritizing inclusivity and accessibility in our product offerings, we strive to create a welcoming environment where everyone can enjoy delicious baked goods tailored to their preferences.”

Customer-Centric Innovation

Business Magazine UAE: How do you integrate customer feedback into your product development cycle, especially regarding health-related concerns?

Sven Mostegl replied,“At Baker’s Kitchen, we highly value customer feedback and integrate it into our product development cycle, especially regarding health-related concerns. We regularly gather feedback through various channels such as surveys, reviews, and direct interactions with customers. When it comes to health-related concerns, we pay particular attention to the feedback regarding ingredient preferences, nutritional needs, and dietary restrictions.

Once we collect this feedback, we analyze it carefully to identify common themes and areas for improvement. We then collaborate with our team of nutritionists and dietitians to evaluate the feasibility of incorporating these suggestions into our products while maintaining our standards for taste, quality, and nutritional value.

From there, we may adjust our recipes, explore new ingredients, or develop entirely new products to address the specific health-related concerns raised by our customers. Throughout this process, we remain transparent with our customers, communicating any changes we make and providing detailed information about the nutritional content of our products.

Ultimately, by listening to our customers and integrating their feedback into our product development cycle, we ensure that our offerings continue to evolve in ways that meet their needs and preferences, particularly in relation to health-related concerns.”

Baker’s Kitchen’s Community Health

Business Magazine UAE: Can you discuss any initiatives or programs that Baker’s Kitchen Destination has undertaken to promote health and wellness in the community?

Furthermore, we actively support local farmers and producers by sourcing ingredients from sustainable and ethical sources. By prioritizing fresh, seasonal produce and whole grains in our recipes, we aim to promote a healthier and more sustainable food system.

Our travels take us across the globe as we delve into the relationship between environmental sustainability and the realms of food, health, and bread.

Overall, our initiatives and programs at Baker’s Kitchen are designed to empower our community to make informed choices about their health and well-being while enjoying delicious, nourishing baked goods.”

Empowering Palates and Minds

Business Magazine UAE: What role does education play in your approach to fostering a deeper understanding of nutrition and baking among your customers?

Sven Mostegl replied,“Education plays a central role in our approach at Baker’s Kitchen to fostering a deeper understanding of nutrition and baking among  our customers. We believe that by providing education and sharing our knowledge, we empower our customers to make informed choices about their food and overall health.

Through our workshops, baking classes, and educational events, we offer hands-on learning experiences where customers can gain practical skills and knowledge about nutrition and baking techniques. Join us on the Journey

Lastly we asked,“Would you like to say anything else to our viewers?”

“Baker’s Kitchen transcends the traditional confines of a bakery, restaurant and coffee shop; it embodies a lifestyle. It aspires to cultivate a global community, and now, Baker’s Kitchen is embarking on franchising, with its inaugural venture set to launch in the vibrant locale of Dubai Commerce City. Committed to forging a sustainable future, Baker’s Kitchen seeks to address environmental concerns, promote healthy living, and champion the art of breadmaking. Our focus lies in forming partnerships that recognize the importance of safeguarding our planet and fostering well-being. In addition to our core offerings, Baker’s Kitchen envisions expanding into health centers, fitness facilities, and collaborations with academic institutions and healthcare professionals. Discussions are underway with local farmers to establish direct supply chains to Baker’s Kitchen outlets. Our ultimate aim is to restore equilibrium in the world by making strides in environmental sustainability, health, and the culinary arts.

In today’s fast-paced world, amidst crucial issues such as environment, sustainability, health, bread, and more, it’s important not to overlook the fact that there is substantial profit potential in these endeavors. This means earning good money from good things, which in turn can be used to further positive impacts. It’s a cycle that more companies should embrace to make the world and everything within it better and more sustainable. The notion of solely focusing on profit is fading and won’t survive, as we only have one world, one life, one environment from which we derive and which our children need to thrive.” Sven Mosteglconcluded
