Sven Mostegl replied,“Sven the Baker established Baker’s Kitchen driven by a passion for baking and a commitment to promoting healthy eating. Embracing the art of fermentation and sourdough techniques, I prioritize creating products that not only taste delicious but also offer health benefits. My personal philosophy emphasizes using high-quality ingredients and traditional methods to craft wholesome, nourishing baked goods for my community.”

Our R&D process involves collaboration with nutritionists and dietitians to understand the nutritional requirements and restrictions of these diets. We experiment with alternative ingredients, like whole grains, organic seeds, nuts, grain free flour and low-glycemic options, to create recipes that are both delicious and supportive of these dietary goals. Through meticulous testing and refinement, we ensure that each product meets our standards for taste, texture, and nutritional value, allowing us to offer a diverse range of options that cater to a variety of dietary needs.”

By giving our doughs ample time to ferment at room temperature, we not only enhance flavor but also improve texture and nutritional value. This extended fermentation process helps break down gluten, making our products more digestible for those with sensitivities, while also increasing the availability of nutrients. By carefully balancing flavor, texture, and nutritional value with the benefits of long room temperature fermentation, we’re able to create baked goods that are truly exceptional in every aspect.”

Could you share a challenging moment in the bakery’s journey and how you navigated through it while staying true to your mission?

Sven Mostegl replied,“One of the most challenging moments in our bakery journey was when we first started baking sourdough in the UAE. The climate and environment here are vastly different from where traditional sourdough techniques originate. We encountered issues with temperature and humidity levels, which significantly impacted the fermentation process and the quality of our bread. However, rather than giving up, we saw this as an opportunity to innovate and adapt our techniques. We experimented with different fermentation times, hydration levels, and flour blends to find the right balance for our unique environment. Through perseverance and dedication, we were able to overcome these challenges while staying true to our mission of producing high-quality, authentic sourdough bread. Today, our sourdough products are a testament to our commitment to excellence and our ability to adapt to any circumstance.”

To achieve this, we offer a diverse range of options that cater to various dietary needs, including gluten-free, dairy-free, vegan, and low-sugar alternatives. Our menu is carefully curated to provide options for customers with specific dietary restrictions, while still maintaining the highest standards of taste and quality. Additionally, we provide detailed information about the ingredients and nutritional content of our products, allowing customers to make informed choices based on their individual dietary requirements. We also welcome feedback from our customers and actively seek out suggestions for new products or modifications to better accommodate their needs. By prioritizing inclusivity and accessibility in our product offerings, we strive to create a welcoming environment where everyone can enjoy delicious baked goods tailored to their preferences.”

When it comes to health-related concerns, we pay particular attention to the feedback regarding ingredient preferences, nutritional needs, and dietary restrictions.

Once we collect this feedback, we analyze it carefully to identify common themes and areas for improvement. We then collaborate with our team of nutritionists and dietitians to evaluate the feasibility of incorporating these suggestions into our products while maintaining our standards for taste, quality, and nutritional value.

From there, we may adjust our recipes, explore new ingredients, or develop entirely new products to address the specific health-related concerns raised by our customers. Throughout this process, we remain transparent with our customers, communicating any changes we make and providing detailed information about the nutritional content of our products.
